{"id":26648,"date":"2022-07-24T08:30:00","date_gmt":"2022-07-24T06:30:00","guid":{"rendered":"https:\/\/geovinum.fr\/?p=26648"},"modified":"2022-10-30T23:02:41","modified_gmt":"2022-10-30T22:02:41","slug":"differentes-definitions-de-lacidite","status":"publish","type":"post","link":"https:\/\/geovinum.fr\/en\/differentes-definitions-de-lacidite\/","title":{"rendered":"Diff\u00e9rentes d\u00e9finitions de l&#8217;acidit\u00e9"},"content":{"rendered":"\n<p>Les acides constituent une partie fondamentale dans le vin, tant du point de vue chimique que du point de vue de la d\u00e9gustation et de l\u2019exp\u00e9rience du go\u00fbt. <\/p>\n\n\n\n<p>Il y a diff\u00e9rentes d\u00e9finitions et vari\u00e9t\u00e9s des acides dans le vin que nous allons analyser dans cet article.<\/p>\n\n\n\n<p>D\u2019abord on doit consid\u00e9rer une distinction fondamentale entre l\u2019acidit\u00e9 fixe (ou stable) et l\u2019acidit\u00e9 volatile : les acides tartriques, maliques, citriques et lactiques sont les acides fixes les plus courants et, d\u2019autre c\u00f4t\u00e9, on retrouve l\u2019acide ac\u00e9tique.<\/p>\n\n\n\n<p>L\u2019acidit\u00e9 fixe est une caract\u00e9ristique importante pour les vins, fondamentale pour la conservation, raison pour laquelle un vin mature (et donc apte \u00e0 vieillir) doit avoir une acidit\u00e9 fixe plut\u00f4t haute.<\/p>\n\n\n\n<p>Pour ceux qui regardent les acides volatiles, sa pr\u00e9sence est toujours n\u00e9gative parce que si per\u00e7ue montre \u2013 fr\u00e9quemment \u2013 une maladie ou un d\u00e9faut dans le vin. L\u2019acidit\u00e9 volatile, en effet, doit \u00eatre sous le niveau de perceptibilit\u00e9 (0,7 g\/l) pour n&#8217;affecte pas la saveur et le produit.<\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h.e6asln1k6jkf\"><strong>Qu\u2019est-ce que l\u2019acidit\u00e9 dans le vin ?<\/strong><\/h2>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"820\" height=\"410\" src=\"https:\/\/geovinum.fr\/wp-content\/uploads\/visuel-rose-8.jpg\" alt=\"\" class=\"wp-image-25456\" srcset=\"https:\/\/geovinum.fr\/wp-content\/uploads\/visuel-rose-8.jpg 820w, https:\/\/geovinum.fr\/wp-content\/uploads\/visuel-rose-8-480x240.jpg 480w\" sizes=\"(min-width: 0px) and (max-width: 480px) 480px, (min-width: 481px) 820px, 100vw\" \/><\/figure>\n\n\n\n<p>L\u2019acidit\u00e9 dans le vin constitue, comme d\u00e9j\u00e0 dit, une composante essentielle, se mesure en pH et on doit se colloquer entre un intervalle de 2,5 \u00e0 4 ; pour ce qui regarde dans le d\u00e9tail l\u2019acide tartrique, son contenu pour des vins de qualit\u00e9 doit \u00eatre entre 4,5 et 9 g\/l.<\/p>\n\n\n\n<p>On va maintenant consid\u00e9rer l\u2019acidit\u00e9 fixe, comme plus \u00ab accept\u00e9e \u00bb dans la production de vin, pas labellis\u00e9e comme un d\u00e9faut et, au contraire, recherch\u00e9e dans certains processus de vinification.<\/p>\n\n\n\n<p>En effet, beaucoup des vins rouges et blancs \u00ab fermentent \u00bb au terme de leur vinification : cette pratique concerne l\u2019acidit\u00e9 du vin, un processus qui transforme les acides maliques (plus aigres) en acide lactique.<\/p>\n\n\n\n<p>Cette op\u00e9ration montre l\u2019importance que l\u2019acide obtienne dans la production du vin, en analysant le produit selon un \u0153il chimique mais aussi de go\u00fbt.<\/p>\n\n\n\n<p>\u00c0 l\u2019int\u00e9rieur du vin les acides sont saveur et propri\u00e9t\u00e9s organoleptiques mais aussi conservation, passion et technique dans une composant fondamentale.<\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h.e66vi8cjdygm\"><strong>D\u2019o\u00f9 vient l\u2019acidit\u00e9 ?<\/strong><\/h2>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"820\" height=\"410\" src=\"https:\/\/geovinum.fr\/wp-content\/uploads\/visuel-2-bleu-39.png\" alt=\"\" class=\"wp-image-25511\" srcset=\"https:\/\/geovinum.fr\/wp-content\/uploads\/visuel-2-bleu-39.png 820w, https:\/\/geovinum.fr\/wp-content\/uploads\/visuel-2-bleu-39-480x240.png 480w\" sizes=\"(min-width: 0px) and (max-width: 480px) 480px, (min-width: 481px) 820px, 100vw\" \/><\/figure>\n\n\n\n<p>Dans le raisins on retrouve trois acides primaires, l\u2019acide citrique, l\u2019acide tartrique et celui malique ; au contraire, pendant le processus de vinification et dans les produits finis on d\u00e9veloppe les acides ac\u00e9tique, butyrique, lactique et succinique. La majorit\u00e9 de ces acides font partie de l\u2019acidit\u00e9 fixe, sauf l\u2019acide ac\u00e9tique qui participe au d\u00e9faut de l\u2019acidit\u00e9 volatile, qui peut \u00eatre caus\u00e9e par un statut sanitaire pas optimal des raisins, une gestion anormale de la fermentation, incurie et manque d&#8217;hygi\u00e8ne et d\u2019autre facteurs.<\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h.dbqsi1qnusun\"><strong>Comment la d\u00e9tecter ?<\/strong><\/h2>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"820\" height=\"410\" src=\"https:\/\/geovinum.fr\/wp-content\/uploads\/visuel-3-rose-41.png\" alt=\"\" class=\"wp-image-25467\" srcset=\"https:\/\/geovinum.fr\/wp-content\/uploads\/visuel-3-rose-41.png 820w, https:\/\/geovinum.fr\/wp-content\/uploads\/visuel-3-rose-41-480x240.png 480w\" sizes=\"(min-width: 0px) and (max-width: 480px) 480px, (min-width: 481px) 820px, 100vw\" \/><\/figure>\n\n\n\n<p>Dans le go\u00fbt on catalogue les vins dans quatre typologies sur la base de l\u2019acidit\u00e9 : vin plat (acidit\u00e9 basse), vin plut\u00f4t frais, vin frais et vin \u00ab acidul\u00e9 \u00bb.
